This one is one of my all time favorites to have around when I need a quick and incredibly nutritious snack or lunch. Ever used Hemp seeds? Until I went dairy free, I never gave them a second thought. Now that I need to find other means for adding protein to my family’s diet, instead of adding whey protein, I fell head-over-heels in LOVE with Hemp!
Shelled Hemp seeds are rich in Omega 3’s and boast a whapping 11 grams of protein for only 2 tablespoons! They contain all 10 Essential Amino Acids, low carb, no cholesterol, no sodium and are high in Folic acid, Magnesium, Manganese, B vitamins, Phosphorus, Iron AND Zinc! Whew! If that’s not enough, Hemp has a wonderfully nutty flavor, which make it a perfect replacement for peanuts in peanut butter.
It addition to using Hemp seeds, I add some of “my beloved” coconut oil. It helps round out the earthy taste of the Hemp seeds, as well as adding lots of high quality nutritional values. See my article about Coconut.
It’s so simple! Do this:
1/2 cup Shelled Hemp Seeds, kosher, organic
1 Tbls Coconut oil, Extra virgin, organic
1 packet Stevia, I used Sweet Leaf, but you can use whatever sweetener you like (JUST NOT REFINED SUGAR 🙂
1 tsp Xylitol
pinch sea salt
1. Add Hemp seeds to food processor and blend for 8-10 minutes, until they have become a thick paste
2. Scrap bowl down
3. Add all other ingredients, blend together
I immediately spread this on an organic wild rice cake and shared it with my kids, who could get enough! I love when they clammer to eat things are really, really good for them!
