Not Your Average Broccoli Salad

Broccoli, I call it the king of the vegetable world! It helps prevent cancer (has even been used to treat cancer), it helps protect our bodies from toxic radiation and it helps with arthritis suffering. Broccoli tastes great when it is prepared with sweet ingredients, like apples or raisins. I often saute or grill broccoli and apples that have been tossed in coconut oil, then puree them to make deliciously smooth-textured baby food. Babies love it! They think they are having dessert!

Amount               Ingredients

3 cups                  Broccoli, cut into bite-size pieces

1/4 cup               Red onion, small dice

1/2 cup               Trail mix, organic and unsulfurized

3 Tablespoons  Bacon bits or Imitation bacon bits

1/4 cup               Raisins, unsulfurized

3/4 cup               Canola or Olive oil Mayonaise or Veganaise

 

Steps

1. After veggies are chopped and washed, place all in bowl

2. Toss all ingredients together

3. Allow at least one hour to “marry”, overnight is best.
