Gluten, Dairy and Sugar Free French Toast

French Toast……Mmmmmm! But French Toast without gluten or dairy or sugar, oh my, that can’t be good! But it is, and it’s luscious! This is again a very simple recipe that contains some of my favorite ingredients and makes everyone happy. I love making this breakfast on a morning when my kids are dying for pancakes, but I simply don’t have time for a big production. Bingo! I aim to please so this is a great compromise.

Amount                   Ingredients

2 large                      Eggs, organic, free-range

1/2 cup                    Coconut milk, So Delicious Vanilla Sugar-Free

1 tsp                          Cinnamon, ground

1/4 tsp                     Nutmeg, ground

1 tsp                          Vanilla

1 tsp                          Honey, raw, local

1 packet                  Stevia, I used SweetLeaf

4 slices                    Gluten, Dairy, Corn & Sugar free bread of choice

1 Tbls                       Coconut oil



1. Whisk the all ingredients, except the bread & oil, together

2. Heat oil on a griddle or large saute pan over medium

3. Dip the bread in the milk mixture, one at a time, first side then the other, make sure it is well coated

4. Place the bread on the griddle and cook each side for about 3 minutes or until golden brown

5. Flip & do the same on the next side

6. You can use 100% maple syrup or my favorite Coconut Secrets coconut nectar
