Fluffy Quinoa and Pinto Beans

Awww! Quinoa, what a wonderful ingredient. Quinoa is a seed, so no worrys about grain or nut allergies. Quinoa is rich in high quality protein, equal to that of milk (dairy kind of milk that is). It contains twice the amount of protein than rice. It is higher in fat content than wheat, good fats, mind you, amino acids. It is easy to digest and also contains: Calcium, Iron, Zinc, Potassium, Magnesium, Phosphorus and Copper. I use the pre-rinsed ready-to-cook kind of quinoa, keep it simple. Follow the directions for preparing the quinoa, and you will have a wonderfully fluffy result, no slime.

This recipe reminds me of red beans and rice. If you are gluten free you understand that you get plenty of rice and potato in your diet already. That is why I focus on cooking and baking with other, more nutritious ingredients, like quinoa. I used pinto beans in this recipe, although you could substitute pretty much any bean that floats your boat. The vegetables used can also be varied, for instance you could add bell peppers when you saute the onion and garlic. Have as much fun as you can while you cook, and use up things that you already have on hand. If you don’t have fresh herbs available, just use half the amount of dried herbs and add them when you are sauteing in order give their re-hydration a jump start.

Amount               Ingredient

1  cup                  Quinoa, organic, rinsed well

1 ¼ cups             Vegetable stock

¾ cup                   Pinto beans, soaked, rinsed, cooked

1 medium            Tomatoes chopped

½ cup                    Onion, chopped

1tablespoon        Olive oil, extra virgin

4 tablespoons    green onions, organic, diced

1 tablespoon      basil, fresh, chopped

1 tablespoon      parsley, fresh, chopped

2 teaspoons       sea salt

1 teaspoon         Black Pepper, Coarsely Ground

 

Sequence            Step

1              Place quinoa in pot with vegetable stock, bring to a simmer, then lower heat to lowest setting

2              Cover and cook for 15 minutes until tender, stirring occasionally

3              Meanwhile heat olive oil in a saute pan over medium heat

4              Add onions and garlic to pan, saute until onion become translucent

5              Fluff quinoa with a fork

6              Add all ingredients to quinoa

7              Serve
