Creamy Dreamy Chocolate Strawberry Ice Cream – Dairy free

Finding dairy free ice cream that does not contain soy, is not easy. So Delicious makes luscious ice cream made of coconut milk, but it is on the expensive side so it is certainly a splurge item, but well worth it. I have done a lot of experimenting to make an ice cream that rivals dairy based ice cream. My kids deserve to have a “normal” summer which includes ICE CREAM.

Since I am making it from scratch, I want it to be healthy, full of protein and nutrients. I truly believe that we need the right kind of fat in our diets, especially kids, so this ice cream is made with coconut milk and coconut oil. There is also egg used, I only use organic free range eggs in all of my cooking, but if you’d like (or need), you can try using an egg substitute.

Amount         Ingredient
1 can               Eden Organic Coconut milk, this brand uses BPA free cans, when using canned milk, I only use this brand in order to avoid toxins
2 tsp               Biochem 100% Vegan Protein powder
1/4 cup         DariFree chocolate
2 Tbls             Honey, Locally produced
1 each            Egg, organic, free-range or cage-free
1/2 tsp          vanilla
1/4 tsp          sea salt
1 Tbls             Coconut oil, extra virgin, cold pressed
1 cup              Strawberries, frozen, organic, unsweetened


1. Put it all in the blender, just reserve strawberries

2. Blend well, until texture is very smooth

3. Add strawberries, frozen, blend well

3. Pour into ice cream maker, I use a CuisinArt, it works good and quickly

4. When freezing process is complete (about 20 minutes in my machine), remove and place in Popsicle mold or air-tight container

5. Allow to freeze for at least 4 hours before serving, for best consistency
