Cilantro Lime Quinoa

Fresh, fresh, fresh taste and spin on a great rice recipe! We already get MORE than enough rice in our diet, so I like to mix things up a bit by using Quinoa is various ways. Quinoa is high in complete protein, meaning is contain all nine amino acids :), and has so many incredible health benefits. This side dish could honestly be a main course with the amount of protein goodness it contains, but I served it with Citrus Flax Seed grilled fish and Variety Fruit Salsa.

 

Amount              Ingredients

3/4 cup               Quinoa, dry

2 large                 Limes, juice only (or 1/4 cup lime juice)

1.25 cups            Water

1 bunch               Cilantro, chopped

1 packet              Stevia

1/2 tsp                 Sea Salt

 

Steps

1. Place the quinoa and water in a sauce pot with snug fitting lid

2. Place over medium heat for about 10 minutes, stir occationally and replace lid

3. Then add the lime juice, stevia and salt, replace the lid and reduce heat to low

4. Allow to steam for 2 minutes, remove from heat and fluff the quinoa, keep lid on to keep warm

5. A few minutes before service, add the cilantro and stir to combine (cilantro is best uncooked)
