Allergy friendly Cobb Salad

Here is another one of my favorite meals for anytime, fast, easy and healthfully complete.  It can be made many different ways to suit what you have available. The basic idea is to be full and satisfied with plenty of protein and veggies, no need for carbs!

Amount                                 Ingredients

1 head                                   Iceberg lettuce, trimmed & cut into bite-size pieces

1 heart                                  Romaine lettuce, trimmed & cut into bite-size pieces

4 – 5oz breasts                   Chicken, organic is best, grilled & sliced, try my Citrus Flax Seed Marinade

8 slices                                 Bacon, cooked & coursely chopped

1 medium                           Tomato, vine-ripened, medium dice

4 large                                 Eggs, organic, free-range or cage-free, hard boiled, sliced

5 medium                           Mushrooms, button or crimini

1/2 medium                       Red Pepper, medium dice

1/2 medium                       Onion, yellow, medium dice

1/2 cup                                Daiya cheese, cheddar

 

Steps

1. Simple! Mix lettuces together, place a large handful in a large bowl

2. Easy! Line up some of each ingredient on top of the lettuce

3. Top with your favorite salad dressing – Try my dairy free Caesar or Ranch or Honey Mustard or  Citrus Vinaigrette
